Frankel Undefeated!!

With his victory in the Queen Elizabeth II Stakes at Ascot on Saturday, a four length trouncing over horses who were Group 1 winners in their previous races, superhorse Frankel remains undefeated and will now rest for the remainder of the year … but thankfully returning to the racecourse in 2012 to start his highly anticipated campaign as a 4 year old!! turkey sausage pasta

Spicy turkey sausage … was on sale at Fortinos. Tiffany K. loved the healthier choice idea … figured why not? Plus Black Label PC products were recently introduced into the Loblaws markets. And while I ordinarily eschew jarred sauces, lazydan wasn’t in the mood to work, was in the mood to give it a go … surprisingly was very good … so good gonna try the Puttanesca (something to do with a whore, hells yeah I’m trying it, lol) pasta sauce next!! Here’s 2 pics … enjoy!!

talkin’ turkey

Said it before, I’ll say it again … when it comes to spendin’ & savin’ ain’t no better way OR reason than on a turkey. Ninety-three dollars … you fucking shittin’ me? Save that coin fellas, spend it on yer honey … pretty sure she’d appreciate it, and pretty sure she’d show her appreciation too, lol!! 😉

THE RIGHT WAY: Bought this beauty a few days ago, now that’s the way to go motherfuckers, granted the pricier one is 1kg bigger, mine at almost 15 lbs. is plenty big enough to feed my army … my troops, lol!!

Getting ready for Thanksgiving, looking back … boy do I EVER personalize a recipe, get all motherfucking descriptive, lol!! LOVE my “roasted potato heaven” line … when’s the last time you read that in a recipe, lol?   ==========================================================

Thanksgiving Turkey Dinner 2010

Buy a fresh turkey (13 lb.) (6 kg) a couple of days before. This is a perfect size for 5 or 6 people. Buy at a cheap price!! Peruse the local grocery store flyers for the best bird at the best price. Don’t get caught up in the hoopla of free range, hormone free, or any of the other nonsense associated with higher priced turkeys. This year I went to Fortinos and  bought a Maple Leaf Prime air chilled turkey @ $1.79/lb. and spent $23.82 … had I went with the other, higher priced option, it would have cost me in the $45 range. The point is that is NO DIFFERENCE in quality/taste, and with the money I saved, I got to spend and enjoy on wine.

I also took advantage of the warm weather and bbq’ed the turkey for 45-50 minutes on indirect heat to sear and to facilitate in creating a crispy skinned turkey. I then transferred it onto a cooking rack into a disposable pan and threw it in the oven at 400º for about 2 more hours … until a meat thermometer read 165º when inserted into the thickest part of the breast. I used a finely chopped rub of oregano, rosemary and sage. I stuffed it with an apple, an onion, and a clump of sage. BTW, surprisingly the bbq didn’t add any smokiness, or unwanted flavours into the turkey, which was good.

To Buy:

2 boxes stuffing

3 packets gravy

1 can whole cranberries (2 is good too, especially for leftovers)

1 bag frozen corn

1 bag frozen PC Brussels sprouts

1 bag baby carrots – the bigger bag, not the 1 lb. one

1 bag dinner rolls 20, or 24

1 tetra pack chicken stock

butter – have plenty on hand

potatoes

This year I bought PC fingerling potatoes (2 bags), 1 bag red, 1 bag golden. I parboiled (blanched) them and threw them into the disposable pan after the turkey was cooked, generously sprinkled them with PC 4 peppercorn steak spice seasoning and used all the juices, drippings, and all of the goodness from the turkey to coat them, and then roasting and occasionally sloshing them in the pan for about and hour or so at 425º – 450º  making what I can best describe as … roasted potato heaven!!

Start making the side dishes early!! I cannot emphasize this enough!! You need to do this!! Microwaving them right before serving is the final step … and what a timesaving step it is too. The final 2 things to do, are to warm up the pre sliced foiled buns in the oven to get all hot and steamy, and while you are doing this, is to start making 2 packets of gravy (save the last one for the next day and leftovers).

Addendum:

This fed 5 people eating freely, as much they wanted too, even stuffing themselves. The leftovers lasted for 2 people for 3 more days … and still we had more left. The total bill at Fortinos was $55 … sans the booze and dessert!! Great meal, great feast, great price!!

leftover lasagna pics

Musta been the incessant criticism, poking fun from Tiffany K. …  she was somewhat relentless with it too … prompted me to include updated pics, lol!! Do I have a complex or what, lol? She was questioning the lone wolf mushroom sitting atop the lasagna … I kinda liked the presentation. Hey, voice yer thoughts in the comment box on my blog I told her!! Nobody has special privileges, personally discussing content, danistrulytheman’s intent!! Oh yeah … today’s version included cheesy ooey-gooey garlic buns too … hey, I’m only human, lol!!

My healthy lasagna!!

My first foray into something like this … kinda scared to even try it, lol!! Honestly am very excited … NEVER before would have even considered it … I’m all about the authenticity, great flavours, great taste!! Finishing off a tub of fat free cottage cheese for breakfast recently, inspired me … thought I’d google its benefits … WOW are they plenty … found a lasagna recipe using it too. See, to me that’s fucking blasphemous, lol!! Cottage cheese in a lasagna?? Well, set my mind in motion, decided right then and there to make a low-fat version using a whole wheat (fibre rich) pasta in the process. Actually it’s Catelli … haven’t used Catelli in a coon’s age … fuck, haven’t SAID Catelli, lol!! Sorry, I make no excuses either … but I’m a high-falutin-Italian-pasta-buying-foodie, lol!! Sauce is my famous homemade version sans minced beef … subbed with lean ground veal instead … more healthy choices, lol. Oven roasted cremini mushrooms and garlic round out the dish!! NO mozzarella, NO provolone, NO ricotta, NO parmigiano reggiano (ok, just a sprinkling after taking it outta the oven … shhhhhAND only for presentation, picture taking purposes, I AM an artist after all, lol), NO romano lupa, NO garlic bread too!! CHRIST … what the fuck am I thinking … no garlic bread?? Now that ain’t right 😉

my steak ‘n eggs take

Had some leftover BBQ’d Angus striploin steak that I bought from Fortinos recently … sliced it thickly, tightly foiled it, and threw into the oven just to warm it throughout. Made my 5 egg omelette stuffed with provolone, emmenthal, mushrooms and hot peppers. Served with Thomas’ English Muffins (the BEST … and much more expensive than the other common brands, but I’m worth it, lol 😉 ), and Bob’s your fucking uncle!!

2 years … and a day!!

A few weeks ago noticed that my two year blogging anniversary was around the corner. Meant to acknowledge it yesterday, but it slipped my mind … oh well, now I’m officially into my third year, lol. Not counting this post, my total posts stood at 500 … right on the fucking money, 493 published, some drafts, a couple trashed … not bad for a couple years worth eh? And now I’m at 501 … the orignal Levi’s number!! 😉
