This has always been one of my favourites!! Tony, at my local Italian deli made the fucking best version (potatoes, baccala, married together in a loose tomato sauce (broth) … EVER!! Only on Fridays though, ’cause it was so incredibly special … sadly he moved, closed down too eventually from what I heard, so I had to find other variations, interpretations of the succulent salt cod!! Portuguese salt cod is fucking unbelievable too, nothing to sneeze at, fucking love it!! The preparation process required before even thinking of using it, to cook in a dish, is time consuming, a couple of days at least of soaking, changing water repeatedly, making sure to remove excessive salt in the fish!! So much effort, for such a delicacy … but it’s motherfucking worth it!!
