I'm STILL a self confessing, self professing know-it-all, or so I think!

we are family

This post is of recent thoughts and ramblings, a few pics from last night as well. Strap yourselves in, hold on tight!!

Tomorrow marks one month my life changed. I have never professed to believe in God, but I always knew someone was/is watching over me. I know many of these occurrences where I feel being helped in my life can easily be dismissed as pure dumb luck, etc.. Fair enough. This sensation of having my own Angel has been with me for a long time, pushing 30 years – where things happen that help me, that I don’t believe are random or is any reasonable explanation for. I won’t fully expound on this latest one, getting into specifics, I have trouble identifying with the masses, conventional thinkers. I get frustrated with wading pools, I’m the Marianas Trench. That’s the truth folks, not arrogance. If I told you about my latest, most definitive proof my Angel exists, sure all I’d get would be “that’s cool”, “wow, weird” at best. That would frustrate the fuck outta me, so I’ll be mum, keeping everything close to my vest. Better this way, trust me … y’all swim near the surface, I’ll keep deep! Since this whole thing happened, since we met, the way we met, the circumstances surrounding it … every detail, I examine the minutiae, every nuance, every possibility, how, and why?! There is NO OTHER explanation … I have an Angel! Btw, technically was the 11th, but really the 12th. What a day … white wine, beer, and Chinese food! Six and a half hours never disappeared so quickly!

Four days later. Again!

Hells motherfucking yes!! More wine, more beer. No Chinese food, not for lack of trying. It was a Tuesday night, and all closed up shop. Our next time together was last night. My Christmas. I’ve spent 20+ years celebrating Christmas on the 24th, I’ll be damned, I did it again! And, we did Chinese again, lol!

LOVE THIS!! You waltz in, hook up your phone, your playlist like you own the place, AND crank it. No volume police here!

I met you a dozen days ago. You are my friend, last night, I went further and designated us family. Why not? Being fully aware of the pitfalls, the precariousness, the tenuousness of the word supposedly exemplifying union, togetherness, forgiveness?! It’s all a crock of shit, trust me. Don’t believe that crap, fall into that trap for a second y’all! However long this thing we have lasts, you are my family. I have proof too. My recently arrived in the mail Air Miles membership provided me with a supplementary card to give to a family member, obviously encouraging more shopping, more points. Points be damned, I couldn’t have been happier giving it to you knowing I’m in your wallet, always close by. From now to then, whenever then is … WE ARE FAMILY!!

My Family!

Smythson of Bond St.

This was on my Christmas wish list. I NEED (needed) protection for my new iPhone 5s. I went high end because other cases/sleeves were either in the midrange $40-$60 or $100++ … and it was Etsy that sealed the deal. Prices were way too high for what you were getting, and who you would be getting it from. Sketchy-Etsy I say! Nothing replaces a trusted reputation from a 125 year old company. Ordering online from the UK is very civilized as well, never a worry. I’m still in awe, I ordered on the 18th (really, the 19th considering the time difference), and here it is at my front door on the 23rd before 6:00! Now, while I’m VAT exempt, and shipping was free (another thing; I scored free shipping with 2 days remaining on the deal, and depending on how you decipher their fees, if I’m considered USA, it’s £20, if I’m Rest of the World, it’s £30 … HUGE savings, woohoo!), but because it was delivered courier and not Canada Post, I’m not duty, tax free – was nipped for $34! Bloody buggers! It’s a thing of beauty, made in Italy … so mother ‘fn chuffed!

… on second thought!

Change of plans warrants necessary action. From public to protected. Was there plain as day for reading/viewing from early morning, so if you saw it, you saw it … and if you didn’t, don’t fret, is only temporary … will soon become visible again. But, definitely not before my follow up blogpost re: on my Christmas wish list!. Stay tuned y’all!

respite, reflections

A well deserved break, an opportunity to look back. Our Christmas tradition revolves around Christmas Eve, and includes a lot of food. Copious amounts of food, and not only this time of year. It’s in our culture to be overly generous with food. To give you an indication, Tiffany K and I haven’t left the house for groceries since … that’s almost a week. I’m finally reclaiming the fridge as my own, lol. Not to mention I froze leftovers knowing we couldn’t eat everything before spoiling. This year I even tackled baccala. Was very proud of my accomplishment, from sourcing this fish market in the city that carries the best baccala, a part of the city where parking is at a premium, never any spots available, to researching online various methods/rules of thumb preparing it. Generally soaking 1-3 days was the advice, two was better, and three if you had the time. Naturally I opted for the 72 hour soak, with 3-4 changes of water daily. I also researched baccala and potatoes in a tomato sauce recipes as I’ve had this years ago from this great little Italian bakery that used to make it (Fridays only) during the holidays. Alas, they moved, went out of business … not really sure, only know my baccala went along with them. In all my research, nobody bothered to mention the skinning of the fish and removing of the bones might prove challenging if attempting for the first time … thanks internet gurus, lol. Luckily when I bought the baccala I over bought … close to 3 lb, not the 2 lb I was planning to, so I did have some leeway with the wastage. I didn’t settle on any one particular recipe either. I read many to get ideas, that’s what I do, I know my way around a kitchen and felt comfortable enough combining/assembling the ingredients in a casserole dish and baking it without any difficulties. I eyeballed the potatoes I needed (was looking for a 50-50 ratio) and proceeded. And another thing you don’t see in these recipes is for parboiling the spuds before baking? I ALWAYS do to ensure them being cooked through … plus the oven temps they tell you to use are too low (350º – 375º) so I completely ignore that part of the recipe and crank it to 400º – 425º. One thing that did catch my eye, and I was so happy this person wrote this … not sure why others didn’t since it was so helpful? If I was making this recipe, but substituting the baccala with … let’s say tilapia, I’d be seasoning (salting) the you know what out of it. Everything. The fish, my home made tomato sauce … the potatoes … especially the potatoes. But this recipe writer … recipe advisor cautions on doing so due to the baccala’s inherent saltiness. Sure I soaked it, rehydrating it … changing water over and over, but it still retains plenty of salt to sufficiently season the whole dish. And for this tidbit you included, my baccala dish was sublime … and I thank you. It was the highlight of the dinner (but was so busy/preoccupied I didn’t snap any pics to share – sorry), and I was thrilled with my work, accomplishment … my success.

It’s funny after our Eve feast, a long time spent filling our bellies as you can imagine … a mere twelve hours later we’re back at the table for a HUGE breakfast blowout before the troops pack their booty and go on their merry (Christmas) way. Now that our dinner leftovers are done, felt like relieving that today, but on a lesser scale … and in a quieter moment. And now, found time to take a pic. 😆
