Roasted green bean, cremini, & grape tomato salad!

LOVE roasting veggies, this one’s easy peasy … and healthy as hell to boot. First snip, then wash the beans (and tomatoes), wipe clean the creminis with a mushroom brush (or a damp paper towel), then slice in half … season it all liberally with sea salt and freshly ground pepper (oh, I also threw in a few cloves of smashed garlic for added flavour, which I later removed after roasting). Liberally splash with olive oil and toss till coated … evenly spread on a parchment lined baking sheet, and throw into a 450° oven, and half an hour later Bob’s yer uncle!! A coupla pics, enjoy!

S T R E T C H I N G

I am the KING … love eating on the cheap, waste not want not … I’ll drag out a meal for a week, no joke. Started this party with meatballs (BEST batch btw – sorry, no pics) and my home made marinara. Three days in, digging through my creative cupboards (metaphorically & literally) I found these … Magyar noodles doing their best drywall plug imitation, and half a bag of Gomiti. Well, you know the drill … sea salt al dente, then added to ma ma meatballs … NOW I have more food than when I started, lol. Served with frozen garlic toast found in the freezer *score*, and freshly grated Grana Padano from my fridge. Note: must snap pics sans grated cheese – can’t see the forest for the trees. 💡

plank salmon pics

Yesterday’s sunny and unseasonably warm 19°C permitting a late October BBQ was just what the doctor ordered, the perfect cure for stopping the dizziness … getting off this spinning ride called life. Food truly is love, it soothes the soul … two Atlantic Salmon filets quickly marinated with olive oil, red onion, dill, parsley, sea salt & black pepper … skin side down on a water soaked (for a few hours) cedar plank and into my hot and ready Weber, shutting the lid and patiently allowing it to make magic. Squirted freshly squeezed grilled lemon juice after plating … a glistening finish. Almost gives the appearance of smoked salmon, but it’s VERY moist and tender … AND pink inside. Please folks, NEVER overcook it – it’s a sin against salmon. My planked salmon … kerplunked!!

80oz. to freedom

… five pounds (mad love Sublime btw) worth of prime-time porterhouse … check out the fat tenderloin portion …  porterhouse baby … ain’t talkin’ T-bone here folks!! Finding this cut at your local meat market can be challenging (typically want that filet to be sold separately at a much higher price), luckily not only was I able to … but the butcher gladly band sawed two 2 inch thick cuts as requested. AND, I scored a steal-of-a deal on price per pound too … sweet!!

Sorry, that pic ain’t exactly the best showcasing the beauty of the dish – in my haste to sit and eat, got lazy with the camera, so it’s all I got y’all, lol. I let it rest a good ten minutes prior to carving … was a beautiful rare, medium-rare … splashed with steak au jus over top after plating, served it with my grilled mushroom, onion, garlic medley … my secret special blue cheese sauce, and for a change … potato scallion bread … and washed down with my fave Creemore … errr, that’s not for a change, lol!! 😉
