… that’s a mouthful, and it was! oh, before I forget, Havarti – old Cheddar was my first choice, but package was sealed. Again, the king of using what I got on hand… pasta, cheese, sour cream. Beans and bread were gratis… courtesy Iris and Tiff respectively. Thanks gals! Hmmm, am I really the king of shite, lol?!
This is another one of my famous throw everything in the pot and hope for the best type of creations!! I bought sausages (hot Italian), and used whatever else I had in the house. I’ve been on a chickpeas roll of late, incorporating them in many meals I’ve been making … talk about awesome and healthy!! I grilled the sausages, then combined them w/ sautéed sweet onions, red peppers and kale. After a few minutes of sizzling ‘n flippin’ on high heat, I deglazed w/ white wine, added a bit of chicken broth, tossing in the chick peas, and bringing everthing to a simmer before placing in the oven to finish! Served w/ the obligatory/proverbial Italian crusty peasant loaf to sop up all the goodness, the best cheese you have in the icebox, a glass (or bottle, lol) of red vino, the lights dimmed creating the perfect ambience, Sting, or maybe Annie Lennox, playing softly in the background setting the mood… and yep, dansyermothereffinguncle …

Thanksgiving Day today, but celebrated with family yesterday … so you know what that means … LEFTOVERS, lol! Lotsa turkey, stuffing, gravy, pumpkin pie. Yum!
What a beautiful Canadian autumn day today, a great day for a run, a perfect opportunity to try my hand at fartlek training. I guess you can say I’ve done it before … changing up my running. I broke it up into four separate runs. First, I ran 2K semi-fast, then 1K really fast, then another 1K even faster, and finished with a 2K that included a hill climb, and a long gradual descent. Was fun mixing it up. Even tried a new app, sorry Strava, sticking w/ RunKeeper. PLUS, it’s my nephew’s birthday today. A beautiful Canadian day indeed!

… we don’t even buys egg anymore – egg whites only. Same for milk (dairy) – almond, or coconut (unsweetened) only. WOW, talk about a change in lifestyle. Honestly, can’t remember everything that ended up in my gorgeous frittata – lots of fresh veggies … I see organic vine ripened cherry tomatoes (sliced in half) on top – along with a heaping helping of fresh garden herbs. I know I used leftover meat, Tiff K’s sublimely spiced minced turkey concoction we had for our nacho dinner the day before. Cheese too … I think a few slices of Jarlsberg I had on hand … maybe a few remaining slices of turkey breast too. Nothin’ gets wasted here folks! As y’all know, I’m the king of usin’ ‘n utilizin’ leftovers, the king of changin’ it up … creating new meals! Completely, new and different dinners with what’s on hand! Anyways, enough talking – a few pics. Enjoy!

Spicy is right! I think garlic is what separates it from other hot sauces I’m accustomed to, and this is the real rooster sauce. Recipe’s my creation; Shanghai thick noodles, braised Baby Bok Choy, beef stock, BBQ pork, and tilapia … TILAPIA? … lol, had a few frozen fillets, figured it be a good time to use them … oh, and I had everything on hand except the Baby Bok Choy (a huge bag’s worth set me back $2.17 – great value), and y’all know how I love using what I have in my fridge/freezer/pantry, creating healthy, fun dishes. For a couple of bucks Tiff and I ate well today, AND have leftovers for tomorrow … yep, this one’s def a winner!

… yesterday’s leftovers; collard greens, tomato sauce and potatoes that I baked. Knew that it wanted more liquid/sauce, so today I added between 500 ml and a litre of water and stove top cooked it (basically reheating, letting it slowly simmer) in my All-Clad saucier. Transforms it to more of a soup/stew … just loosened it up, and changed it completely. A few pics y’all.
… completely made this up. Had a Lock & Lock container of leftover homemade tomato sauce w/ chopped collard greens (was from my baccala holiday meal) in my freezer, and a 20 lb sack of spuds sitting chilly in my root cellar (ok, I don’t REALLY have a root cellar, but my parents did when I was a kid, lol). I defrosted the collard green tomato sauce (put the ice chunk in a sauce pan on low heat), peeled 6 or 7 potatoes into large chunks … oh, for added flavour, thinly sliced a Spanish onion and sautéed till translucent … then combined everything thoroughly and dumped it all into my Le Creuset Stoneware dish to bake for an hour … voilà, danistrulythemakingshitupman … 💡
… I’m plum outta posts … perhaps that shoulda been the title, lol?! Anyways, you guessed it, leftovers … frozen and defrosted leftovers … this is the third and final day of my killer balls. My turkey meatballs that first started rolling Christmas Eve. Comfort food on a cold day … open faced sammy on a toasted ciabatta roll with roasted creminis, caramelized onions, hot banana peppers, and bubbling provolone after a moment under the Sally …

… my favourite dish/way of utilizing leftover chili (especially on a cold, blustery, wintry day) … well, maybe not … LOVE chili dogs too … chili cheese fries, spaghetti chilignese (just made that shit up, so don’t be pilfering … at least give credit where it’s due if ya do) are motherfucking awesome as well … shit, now I’m confused/over-thinking it, lol. This was day five of the chili (still have enough for day six, AND I did freeze some, so I can enjoy those chili dogs for a quick meal). In my Le Creuset stoneware I layered basmati rice (leftover too, of course … be sure to add extra water/liquid as it tends to greedily sop up moisture) and an equal layer of the chili, with a generous layer of cheddar topping it all. Bake it hot and long to really get the cheese bubbling, and with blackened little crispy bits beginning to form around the edge … this means you’re done. A couple of pics y’all. Know it’s hard to visualize (individual) portion-wise, but trust me they’re perfect … served in my newly and proudly purchased terra-cotta chili/soup bowls handmade in Portugal. Sliced & spatula-ed, sour creamed & served … alongside a FROSTY (today at least, lol) tall cool one … lighten up baby I’m in love with you!!
